Food and Beverage (F&B) is an increasing area of pain for clubs. Only one-third of a typical membership uses these facilities on a regular basis.  The pressures to reduce F&B costs and services are spiking, while the membership’s demand for a premier venue and exceptional experience remains constant.  The average club’s F&B amenity costs $1.44 for each $1.00 of revenue it brings in.  As a result, most F&B operations are subsidized by membership dues and/or assessments which can cost an additional $1,000 per member, per year (even for the 2/3 of the members who are not even using it).  Additional dynamics include operational concerns such as rising energy costs, increasing water restrictions, continuing capital investment requirements, as well as, financing concerns like debt burdens from historical capital projects and increasing delinquencies in accounts receivable.
